Last week someone posted a photo on FB asking the question, “When you get out of quarantine, will you be THE HUNK, THE CHUNK OR THE DRUNK?” Honestly, I think I’ve teetered between all three. The stress of running my company while homeschooling my 7-year-old son and trying to prevent my energetic 3-year-old son from hurting himself or interrupting my husband on his conference calls has brought on massive amounts of anxiety. I told my husband that the stress from my 3-year-old has created a constant flood of cortisol into my system and I’m going to have belly fat because of his whining and screaming. But if you are a mom and reading this then you may have a similar situation. You have probably handled it better than me, but you can relate.
I tried to soothe my anxiety with snacking the first month of stay-home order. Sure they were healthy snacks, but it was still just a compounding of excess calories ingested for entertainment/habit instead of nourishment. It was bad. So after really working hard to get my family into some semblance of a daily routine (and giving myself grace on the days when it didn’t come together as planned) I made a plan to reduce my snacking and make self-care a priority.
My daily routine of drinking green juice has changed my life because it has reduced my snacking, increased my intake of emerald vegetables and makes me feel like I’m being proactive with anti-aging. Here’s what else makes this green juice recipe amazing—it’s easy. With all of the sh** going on it has to be easy or I’m not going to do it on-the-daily. Which is why I have never gotten into juicing until now. Who has time to put everything into a juicer and then spend an exorbitant amount of time cleaning it. Not me. So until I started making juice myself, I was buying the Suja celery juice or Uber Greens at $4.00 a bottle (and this is considered a steal compared to some other brands).
So how do you make green juice quickly without a juicer? You use a Vitamix and a nut milk bag. Yes it’s called a nut bag and every time I say it we laugh (with a household of boys the humor rubs off). Seriously I am in love with my nut bags and I have gifted them to my sister, my Mother-in-law and basically anyone who is remotely interested in my juice regimen. These are the ones I use and have gifted. I can hear my family now…”Look what we got in the mail from crazy Aunt Chelsea!”

The recipe is extremely simple and yields a lot of fresh juice.
Glow Girl Green Juice
Servings: 2
Ingredients
1/2 head organic celery including stalks and leaves
1/4 organic English seedless cucumber
handful organic spinach
18 oz filtered water
1 Tbs lemon juice
Directions:
Add everything to your Vitamix or high speed blender and blend. Place the nut bag over a large mason jar and strain mixture. Serve immediately with crushed ice or place in refrigerator. I usually split with my husband. It makes me feel good that I’m helping him get his daily greens too.
Cleaning your bag: super easy. Just flip inside out, discard any of the vegetable pulp, clean with dish soap and then hang to dry. The entire cleaning process takes less than a minute. It comes with a string so you can tie to a hook or laundry hanger.
I drink my Glow Girl green juice either after my workout or as a bridge between breakfast and lunch. I’ve also been experimenting with adding different herbs like cilantro, sweet basil and parsley.

Isn’t Vitamix a juicer.

Nope. Just a really good blender.
But, any blender will do.
If you use a cheap blender, you might want to use a few ice cubes as part of the water, and blend a little longer.

I bought a Instant pot blender from Walmart that is AMAZING for the price. Even heats if you’re making soup. I got it on sale for under $50!

It is very expensive, so I was going to have a Pampered Chef party to purchase it. Now, I don’t have to that at all. I’m going straight to Walmart.com to check out this blender & purchase it. But, why strain it at all?
Couldn’t we just drink the whole thing and get all the other healthy components, like fiber?
Or, is there just too much bulk left over?
Maybe I’ll try just putting some of it back in after the big squeeze.

Hi! You have a great point. It is nice to get the fiber from the veggies for sure. I like to strain it so it’s light, like a juice, but I like to make green smoothies as well. When I do this I add some stevia, a pea protein powder and ice along with the veggies. I like your idea of putting some of the pulp back in so it isn’t too much, but you can regulate the texture. I do not strain it at all and have a Nutri Ninja Pro. I drink it every morning with the fiber and love it. It really sustains me all morning and all I have is water until lunch or even a little later. I really love it and I am not the veggie type until I tried this. Feel great.
