Not much beats grilling on a summer Sunday. Today we had tilapia and wild Alaskan salmon (the Kirkland brand at Costco is my favorite). We change up the marinades, but always try to keep it healthy. The tilapia was marinaded in Ken’s light Italian dressing and the salmon in Trader Joe’s Soyaki. Although Soyaki contains sugar, it’s much lower in both salt and sugar than many of the other teriyaki type dressings on the market. If you choose to use a marinade on your tilapia make sure you grill the fillets in a foil packet because they will fall apart from tenderizing. PS: I could eat the tilapia from Costco three days a week for dinner I love it so much. – CC
