There is nothing healthy about this recipe except that indulgence itself is healthy once in a while (use your CMH bracelet to count indulgences during the week. It will keep you mindful). That being said, you will wow your guests and no one has to know it was semi-homemade. Scratch is all relative nowadays, right? For those who know me, I’m big into entertaining and this has become a go-to dessert.
Cupcakes
1 box Duncan Hines Moist White Cake Mix
1 cup flour
1 cup white sugar
2 Tbsp vanilla
1 cup sour cream
4 large egg whites
3/4 tsp salt
Whisk together cake mix, flour, sugar, salt. add remaining ingredients and BEAT with mixer for 2 minutes.
Fill muffin cups all the way to the top.
Bake for 18 to 22 min. Temperature is the one on the box of cake mix.
Frosting
6 cups of powdered sugar
4 sticks of butter
2 tsp of vanilla
2 TBSPĀ of heavy whipping cream (comes in a carton near the coffee cream)
Mix sugar and butter using low speed on mixer, increase speed and continue mixing for 3 minutes.
Add vanilla and whipping cream and beat on medium for 1 minute more.
Add more whipping cream if you are going to pipe it on the cupcakes (the fun part).
